The easiest and yummiest egg bake you'll ever make! Kid and husband approved! This egg casserole is gluten and dairy free, and can even be eaten on Whole30 if you swap out the milk for a compliant substitute like almond or coconut milk.
I made this last Sunday for dinner but it's also what we have on Christmas morning along with a Kringle from Trader's Joe's. It's always requested and the kids LOVE it.
It's almost embarrassingly simple, but always good and easy, and therefore you might need it in your life too!
4 Ingredients:
1 large potato or 2 smaller potatoes, shredded
1 roll of breakfast sausage (sometimes I use 1/2 roll of sausage and make two pans of egg bake instead of just one
9 large eggs
2 cups of whole milk (substitute compliant milk if doing Whole30)
Directions:
Shred potatoes into hash browns and cook in olive oil over stove until about half way done.
Transfer to the bottom of a greased 9x13 baking dish (I use butter or ghee if on Whole30).
*You're not trying to create a base layer, so don't worry about covering the bottom of the pan.
Brown the breakfast sausage and drain.
Place sausage crumbles on top of hash browns. Let cool down a bit.
Beat 9-10 eggs with 2 cups of milk. Mix in any seasoning you'd like before pouring over sausage and potatoes - minced onion and seasoning salt are our usual go-tos.
Bake at 350 for 35-40 minutes or until eggs are slightly firm in the middle.
Servings:
This makes 6 "large" servings (there isn't any left after our family of 6 has it because it's the main dish. I'd say it can feed 10-12 if it's not the main dish). It will keep in the fridge for a day or two afterwards, as well.
Notes:
It can be made a day ahead of time and stored in fridge overnight to be cooked in the morning. This is a very "light" dish without a bread base and cheese on top. I serve it with toast or a bagel when it's not Christmas Kringle time.
Christmas staple:
I make this ahead of time - during the day on Christmas Eve - and put it in the fridge to sit overnight uncooked and covered with foil. When the kids start opening presents on Christmas morning, I pop it in the oven to cook with a timer. Starting the morning off with eggs before all the Christmas treats throughout the day feels like a win!
